National Peanut Butter and Jelly Day Recipes

Did you know there is a holiday dedicated to the world’s favorite sandwich? On April 2nd, National Peanut Butter and Jelly Day honors this special combination of delicious spreads. Celebrate by making the whole sandwich from scratch!  

Peanut Butter
Yielding one-and-a-half cups of peanut butter, this Pinch of Yum recipe calls for just three ingredients: dry-roasted peanuts, honey or sugar, and salt. Start by placing the peanuts in a food processor for five minutes. The peanuts will town into a smooth, creamy spread.When you’re done, store it in the refrigerator.

Jelly
Jelly is a spread that is made by extracting fruit juice and cooking it with sugar and pectin. It sounds difficult, but with this simple recipe, you and your child can make it right at home!  

Ingredients:

  • 4 pounds of concord grapes
  • 1 box of dry pectin
  • 7 cups of sugar
  • 1 cup of water
  • Pinch of salt 

Directions:

  1. Clean the grapes, removing the stems. 
  2. Mash the grapes so juice begins to come out.
  3. Put the grapes in a heavy-bottomed pot. Then add one cup of water and bring it to a boil on high heat.
  4. Reduce heat. Simmer for 10 minutes.
  5. Strain the juice using a jelly strainer or cheesecloth.  
  6. Transfer juice to a pot and stir in the pectin. Over medium heat, bring to a boil. 
  7. Add sugar and salt.
  8. Return to boil for another minute, continuously stirring.
  9. Remove from heat, and skim off the foam. 
  10. Using a ladle, pour the hot jam into canning jars. 
  11. Let cool to room temperature.

Bread
The thought of making bread yourself might scare you, but this homemade recipe from Foodlets is so easy that your child can make it herself. In fact, it’s so simple you may never need to buy bread again!

Ingredients:

  • 3 cups all-purpose flour, separated into 1 cup and 2 cups
  • ¼ cup sugar
  • 1 packet yeast
  • 1 cup warm water
  • ¼ cup butter, melted
  • 1 teaspoon salt

Instructions:

  1. Combine the one cup of flour with sugar and yeast.
  2. Add warm water, then set on a warm counter for 10 minutes.
  3. When the mixture looks foamy, stir in salt, flour, and melted butter.
  4. Add remaining flour and stir again.
  5. Sprinkle cutting board with flour..
  6. Knead the dough with your hands for 10 minutes. 
  7. When the dough is no longer sticky, place it in a greased loaf pan.
  8. Place a clean towel over the pan, and set it in a warm spot.
  9. Allow the dough to rise for 45 minutes. 
  10. Punch it down and let rise for an additional 10 minutes.
  11. Preheat oven to 375 degrees F.
  12. Bake for 25 minutes.
